    Oysters with Tongue in Peat Bloody Mary Granita

    Want to step up your oyster game? Make a granita. It’s a sauce or liquid that is frozen and then shaved off to create the most refreshing oyster accompaniment.

    Ingredients:

    • Oysters
    • 250ml Tongue in Peat
    • 1 Tsp yuzu kosho or green tabasco
    • 2 Tsp. Worcestershire sauce
    • ½ Tsp. wasabi paste (optional)
    • Sea salt and fresh pepper to taste


    Method:

    Mix the ingredients together in a bowl. Then pour onto a baking tray and pop into the freezer for a minimum of three hours. Using a fork shave the ice away and serve on freshly shucked oysters with more splashes of Tabasco.
